From which place, you want to edit the discount percentage? Is it from admin or frontend? Please share a screenshot of your issue to understand it better. Take a screenshot and share via any platform. For example: Lightshot or Imgur

I think I have got your issue. Please go to this location:
components/com_easystore/layouts/
and replace price_segments.php file with the attached file. You need to unzip the file and then replace.
It will show the price in this way:
- Price is 150.58/150,58, it will show 150.58/150,58
- Price 85.00/85,00, it will show 85

You have to replace it every time until we add this feature. I will talk to the team. If the team agress, then they might add this feature in the component. Then you will find options where to show .00 or not.
