How to customize the "Cash on delivery" fields and texts to fit my needs? Indeed I'd like to add some information on the order and delivery process at this step.

I have removed Cash On Delivery from the payment settings. Then fixed the language overrides. Then added it again.

You can override the language string value:
COM_EASYSTORE_PAYMENT_METHOD_COD
Then you can change the text to what you want. But first, remove the previous Cash On Delivery option from payment settings and add a new Cash On Delivery option. Then your text will be shown.

I did the change you adviced but it seems it doesn't give the excepted result...
Actually I did the override:
COM_EASYSTORE_PAYMENT_METHOD_COD="Cash on Delivery test1"
COM_EASYSTORE_PAYMENT_COD_TITLE="Cash On Delivery test2"
But this change isn't shown (at the checkout page):

As I said, I actually wasn't able to override the field as you told me...
Can you please help to find a solution ?
I have to do these changes because there currently exists no way to checkout with neither dedicated electronic payment terminal nor bank transfer! This is an essential feature for the viability of your e-shop system.

I'm sorry but I can't manage to reproduce that...
When I remove the Payment method and then want to add it back, the modified text isn't available... I can't understand what I do wrong. Could you please tell me exactly how you got through that?

Well, that's kind of you, but I would prefer to understand and being able to do it by myself, as I can't ask you each time I need to modify something and wait for an answer... I hope you'll understand my point.

Yes, I would love to demonstrate you. Okay, here are the steps.
- Go to language override and change the text for Cash On Delivery.
- Go to EasyStore payment settings and remove Cash On Delivery.
- Add Cash On Delivery again and save it.
- This time, you will see the changed text.

Actually that is exactly what I did but it doesn't display as it should... The text has not changed.

I did the same way you did, and see: it's back to "Cash on delivery"!! My action is not taken into account...
Can you figure that out and help me to solve this??

Thank you very much, Ofi, for the time you spent.
Good news: I finally solved the issue!
For a reason I can't explain, the process you described and that we both did didn't work on my side...
That's when I realised that the only difference between the two of us was the language of the interface! So I tested it with connecting myself to Joomla admin panel in English, did the process, and... it worked!!
Well I can't explain that, but now I know what to do.
