I have added appropriate descriptions to each course category 
that are not in the "Course Categories" view. Why?

templates/shaper_yoga/html/com_splms/coursescategories/default.php
and added Course Description. It is not included in the component by default. So, I have overridden it on your template. Please check your page now:

That's not what I want, I removed it. Tiles/thumbnails remain without descriptions.
What variable should I use in "courses/default.php" on line 18 to display the category description instead of the last course description?

You have edit in the core files. This is not possible in the overrides. You can check this file:
components/com_splms/models/courses.php

You can make it visible on all categories pages. You have to add this line

in this location:

I know, but then the descriptions will appear on tiles/thumbnails. Then it is illegible. I would like the category description to be visible only after selecting the category, i.e.: clicking on the tile/thumbnail.

You need Custom JavaScript for this. You need to make it appear on mouse click. Hints for you:

It is not displayed by default because it has not been added to the component core file. You have to override it to display it.

You have to run SQL query to get the Category description on the Course page. Sorry, we do not provide customization support and I can't help you further.
