You can set the grid in Lyout builder of your Template Options that allows to control of responsive layout. So here is the documentation linked to all about Layout of Helix Ultimate.

In SP Page Builder you will get some basic option in advanced tab and in column options of addons.

I'm not sure we are speaking about the same thing. For example, if you look at http://a2021.forcesequine.com/ and go down to where I have text & image. On an imac or tv screen, the text is at the top, I'd like it centered in the middle of the text box - any ideas?
