To quickly find it myself, I would like to know in which file I can change the colors of the menu background and the menu text of Educon template.

Did you mean the Header background color, actually?
You can change the background color from the Header row settings within the Layout tab of your Template Options.
Here is a screenshot for your ease:
You can change the color with custom CSS either anytime.
