I use SP Page Builder very heavily. Now I have a doubt: should I activate the production mode? And is there any risk if I delete all generated CSS files? Can you give me a suggestion?

In general, it should/may be enabled after you add all your styles/design changes etc.

NO RISK! You can disable it anytime.
