Since SP doesn’t create articles, is there a way for me to have the Joomla module where I can have the latest ‘page’ like the latest article?

Then look at the bottom, you will see I have to modules. 1 called Latest Articles and one called Links.

I'm not using Joomla for my articles I'm creating pages with SPbuilder. Is there a way to have my Latest Pages listed like they have Latest Articles?

Sorry there is no default option to do that. You have to customize it yourself as we do not provide customization support. But you can try it via 3rd party plugin.
