Hi, I want to reproduce the category page which came with the Quickstart. I need a page for each category but I am not sure how these pages are set up as I cannot find one in SP Pagebuilder and the one I linked as an example is linked to a Joomla category page

Would you please explain your issue more? As far as I can understand your question, the category blog page is made with Joomla categories. So if you create a menu item as blog menu, then you have to select category blog types menu from the articles section there. It will give you a category blog page displayed on your site.
