Easystore - Link Between Delivery And Payment

Hello,
Easystore doesn't seem to allow the creation of a link between the delivery method and the payment method. Would it be something you could add to the next version ?
Why is it useful: I have a physical shop, and some customers want to order through my website, and pickup their order at the shop once ready. I want to give them the possibility to pay directly at the shop when they chose pick-up as a delivery method (cash or using the shop's terminal) but cannot seem to be able to achieve that at the moment.
Additionnally, I'm also allowing my customers to pay per bank transfer, would it be possible to add a notification email specifically when this payment method is selected so I can send them the details of the payment ?

Yes I know I can add information there, I already did that, but if the customer didn't take note of it at the time of purchase, he doesn't have it anymore.
I could add a text to the order confirmation like "if you chose bank transfer, ..." but that's confusing as everyone would receive it. A targetted notification to people who chose this payment method would be ideal as it's a mail only containing information about us awaiting for their payment through bank transfer with the required information.
