I had a issue with one of my Joomla websites with EasyStore. In order to fix the issue I had to use an older backup of the site. I was ok loosing the orders on the website since they went to PayPal, so I have a record of them. But now the order number squence is off.
Is there a way for me to change the current order number from 1091 to 1125?

The order number sequence is typically stored in the EasyStore database tables. Since you've restored an older backup, the sequence has likely reverted to the value that existed at the time of that backup.
The sequence can be reset for invoice ID, but there is no option for order ID unfortunately. Here is a screenshot of the relevant options in EasyStore general settings:
