Actually, it is not so clear to me what you want but if you want to show all the albums from your different categories together, you can create a menu item and then select albums as the menu item type. Here are the screenshots:

that is just how i have it, only accesible via menu

There is no default way to do that as per my knowledge.

Categories do not have any featured images but Albums has. However, showing album/albums is possible through module also.
