I am using the Finatic theme (but the question is generic). I have not done anything with the demo (quickstart). Here's my question... Entering the site from the front end, there is home page ALWAYS shows /en/ for English. I'm only using one language and I want to eliminate the /en/ at the end of the URL - how?

Actually, it's Joomla language settings, not related to JoomShaper software.
However, if your site is a single language only, please disable all language plugins:
System - Language Code - OFF System - Language Filter - OFF
Or,
By default only for default language you can remove lang tag from URL,
Core plugin : System - Language Filter > Remove URL Language Code [yes]
