Please try the following:

You have to go to the Menu settings for the page where you want to show the page title. Then you have to go to Page Title tab and Enable Page Title.

Where can I set this for all articles in a category? More specific: for all articles in the CategoryBlog overview page, and for the individual articles in this category.

When I check the TAB Blog view in menu settings Helix gives you options like "intro image" for each article. How can I make the settings for the Article TITEL to appear on top of the Intro Article? Or do I need to create a special template with SP page builder and use specific CSS ??

Yes you need customization on that, as there is no default option to do that.
