EU - Webfonts

Because of the Problems of using Goolge Fonts in EU, I want to remove all webfonts from Template Helix ultimate and want to use system fonts. What do I have to do? In Helix Template I have to enable in Menu Typography all and choose the Font-Settings.
But what is used if these settings are disabled? Like on my site?
In Jommla-Settings and SPPB I have removed the Google-Font and Font Awsome.
If it is possible to store these 2 Fonts locally it would be good. But I did not found a documentation to do this. In SPPB I can do this in the Font Book.
What is the best way for handling Google and Awsome Fonts?

Becuase as you know Font itself is not a problem, but source from it's loaded. Font Awesome was / is always loaded ONLY from your site server, not from different US server.
