Is there any way of implementing PHP higher than 7.4? I want to update tp joomla 5, but it requires PHP 8, but this template have errors on PHP 8

Melvin template is not officially PHP 8 compatible. You can check the compatibility with PHP 8 and Joomla 5. If it does not work/function, then you will have to wait for the template update.
