Just wanted to know quickly about how to change these colours
The header is White and has black TEXT ( White Logo ) I would like the header to be Black and Text white including the Menu dropdown hamburger.

As I noticed you already have black header and white menu items.

But I set you already by using custom CSS:
.burger-icon > span {background-color: white; }
BTW
I am not sure if you read webmaster tutorials, but for favicon - 32x32px is OK size - in most cases it's resized into 16x16px anyway. Used by you 1024x1024px doesn't make any difference in that image quality, only slow down process of loading that file.
