in the helix hultimate templates with the default header, how can I manage the positions with the modules "logo", "menu", and any "top1,2 ..."?

Do you want to change the module position? Would you please describe what you want to do actually?
However, the following documentation may help you to customize thigns with predefined header, and you will get direction about how to create a custom header too:

I would like to add a top1 position to the right of the menu and customize the width of the 3 modules: logo, menu, top1.
These customizations are feasible in the layout builder for all other positions except for those in the header, why?

If the Predefined Header does not fit your need you have option to create a custom header.
