Hi

Any idea how I get back to the builder view (and not the live view to edit)?

I have just updated to version 4.0.10 of page builder

RC version should be in next week of May.

The current version of SPPB 4.0.10 doesn't have the back-end editor. So you can reverse your website from backup and wait for 5.0.0 stable.
