Creating Categories For Pages

Hello,

I want to create categories for my pages on SP Page Builder, for the prurpose of keeping order and easily finding pages, but i can't find anywhere to do it. The category drop down window is gray, as if it is not activated.

Thank you so much! Your answer was very helpful and i was able to find where to create categories thanks to the screenshot you provided. (For some reason i was not seeing it before!)
