2: I want to add a free or dropdown text field in the sheet of certain products. The product is a registration for a team and the customer must fill in a field with the name of the desired team.

3: How to export all sales in excel or another format with all purchasing information?

Thanks for contacting us. Sorry, right now this feature/functionality is not available. But we will try to considering it for future update. Besides, We are working on Tax functionality. Massive feature will be add on next release(v1.3.0).
