I installed it with Quickstart and when configuring the LMS only these options appear from the attached photo.
There is no option to enter the PayPal customer email.
Client needs to change the site online, that's all it's missing.

Our dev team is working on it. I will give you a feedback on it by the end of today, as of now you might know that Joomla last update had some issues and that conflicted with it.

Hello there
Please update to the latest Joomla 4.0.4 version after taking the full site backup. It's an issue with the Joomla 4.0.3 version which is already fixed in the latest version. So update to the latest version and check from your end after clearing the browser and Joomla cache. Hopefully it will solve your issue.
If the issue persists, feel free to give us a buzz again.
