Form Builder - Can't Output Checkbox Field

Hi there,
Paid customer of Joomshaper Builder.
Using Form Builder and can't find the documentation on the Form Builder.
HOW do I output to an email the choice of the person that clicked on options in a form where they chose one or more values from a checkbox field ?

I am not sure if I understand well. Let me understand your concept, if somebody choose person name from "What mentor do you like to work with:" - that person would get a e-mail, not all of them or not only site admin?

I am not sure if you can use Field name inside - Recipient Email. But you can use "Field Name" inside : Email Headers - Cc: {{mentor}}
but in that case select fields must be e-mails - not names
