It's from the template language file.
To translate Coming Soon page to another language, just install that language pack via Joomla extensions manager, enable it for the front end of your website, open up the language\en-GB\en-GB.tpl_Your_Template_Name.ini and translate both singular and plural words for "Month", "Day", "Hour" and "Minute".
