If you look at the following page you will see that the image box on the left is not big enough to hold the info and button, how can I alter it?

You may put the following code in your custom CSS:

.sppb-addon-image-layouts .sppb-addon-image-layout-content {
    height: auto !important;
}

Hope this will solve the issue for you!

Note: Path towards custom CSS(Joomla 3): Extensions>Templates>Styles> Click on your current default template name then choose Template Options. Then find custom CSS within the custom code.
