Is there any way to disable Unfold color switcher? and keep a default color that i desire?

When you change presets, try disabling the SCSS-to-CSS compiler, save, then enable it again and save once more.

I apologize for the misunderstanding. All of the new template colors are managed through SP Page Builder → Settings → Color Library.

You can managed colors from here.
