Hello Giacomo

Please use this CSS to Template Options -> Custom Code -> Custom CSS. This will make all SP Page Builder Header addon not selectable.

.sppb-addon-header ::selection {
  -webkit-user-select: none;  /* Chrome all / Safari all */
  -moz-user-select: none;     /* Firefox all */
  -ms-user-select: none;      /* IE 10+ */
  user-select: none; 
}
