Helix Ultimate and SP Page Builder both got PHP 8 support recently!

However, for now, you can stay at PHP 7.x version as you mention it is running smoothly!

On hosting I set PHP back to version 8.0.3 and did some new tests. The problem only occurs when I try to edit pages with the editor. I looked at the solution proposed in the FAQ that you indicated to me, but it is not applicable because my hosting allows me to modify only some parameters of the php.ini, but not those indicated. I have seen the following FAQ for the generic error 500, because it seems to me more similar to the problem that arises, but my error only occurs in the editing phase ... You can ask hosting support for the parts you do not have access to change I think.
