It looks like something wrong with PHP version. New Joomla needs PHP 7.1, 7.2 or 7.3. With those all should work. So you have to check & confirm what exatcly PHP version is used.

PHP 7.4 and PHP 8 is NOT recommended for Helix3 based templates.

Yes, you can use some database tables from "old" orginal website. For example prefix_content and prefix_categories -- to keep articles etc.
