Hello,
I did check the documentation as well. Please excuse me if I miss it among all of the Component's features, but is it possible to set the period a room or anything else of the offerings are available? For example when a Hotel or other facility is not open all year round but only for a period of months during the holiday season (summer, winter, etc)

You can use SP Booking Package where you can set Start Date and End Date.
