Is it possible to somehow change the menu fuctionality from hover to click.
The off-canvas uses click (presumably for mobile use) but I would like the desktop menu to allow navigate by click not hover. I see no settings for this but I'm wondering if there is any other methods available.

If you want a different functionality that is not in our product already, then it will be better to ask any developer in your city. Personally, I would be happier if I could help you with this. JoomShaper doesn't offers this service.
