I want the hover color of the text in the header to be gray or in gray tones. I tried changing it with CSS, but it didn’t work. Can you help me?

Thanks for contacting us. You can use this CSS in your custom.css file

.sp-megamenu-parent>li>a:hover{
    color: gray !important;
}

BTW

Remember to you have to keep good color contrast level to keep Web Accessibility, also if we talk about hover over Main Menu items and footer menu. Typical grey could be too light for white background, consider using darker grey or even adding underline.
